Treasure of the Week

Our treasure of the week has been cherries. I finally purchased some after the priced dropped by about $4. My kids ate them up so I bought another bag. So proud that my kids are eating a new fruit, I got online to find out exactly how healthy this treasure is. Check out www.choosecherries.com. I noticed that the kids began to slow down eating them today so I found a great recipe that I wanted to share.

Cherry Muffins
1 cup flour
1 cup whole wheat flour
1/4 cup softened butter
1/2 tsp salt
4 tsp baking powder
1 egg
1c 2% milk
1 c cherries, chopped (pits removed)

Preheat oven to 400F. Spray mini muffin pan with olive oil spray. Mix together dry ingredients. Stir in egg, milk, & butter. Fold in cherries. Fill muffin cups and bake for 20 minutes.

Sounds good! Did your kids like them?

One did-three didn't. I did but found that they didn't stay moist. Much better if eaten the same day as I made them.
